Audacity: Free Sound Editor and Recording Software

Audacity is a free, open source software for recording and editing sounds. It is available for Mac OS X, Microsoft Windows, GNU/Linux, and other operating systems.  By use of the lame.dll, Audacity has the ability to export what you record as an MP3 file.  Don't forget to check out the Plug-ins and effects.

 

JetAudio Basic a free skinable multimedia player from COWON America.  Other than being a decent player capable of playing all the major file formats (WAV, MP3, MP3Pro, OGG, WMA, MPEG, AVI, WMV, MIDI, RM, and video and audio CD tracks), it also provides CD burning, recording, conversion to other file formats and a broadcast utility (JetCast).  The most useful feature for podcasters would be the MP3 tag editor including the ability to attach an embedded picture into your podcast MP3 file.

For those videos that require a separate codec, GOM Player will find one and direct you to a place where you can download open source version of the codec. That way, you won't get stuck with unnecessary codecs on your system.  Other capabilities include screen capture, play broken AVI files and more. 

Peercast is a P2P (peer to peer) broadcasting utility.  If you have ever had a desire to be your own DJ or be an internet broadcaster yet do not have or wish to spend the huge amounts of money for the standard internet stream casts, Peercast may be what you need.
